How low can you go and have it still taste good?

Thought I would share some low cal recipes/ideas with you all. They’re low enough that you can add a little more:

Stuffed Bell Peppers
110 calories

bell pepper half (cut longways)
3 tbs. refried beans
1 tbs. mozz cheese
2 tbs salsa

Fill Bell Pepper half with refried beans and top with cheese. Bake in dish with water in it (about halfway up the bell pepper - helps it cook right) in oven @ 350 until desired texture.
Top with salsa and enjoy.

Tip: You can make a bunch at one time and leave them in the fridge for later during the week. They microwave well.

Flat Bean and Cheese Burritos
100 calories

One small corn tortilla
One tbs. refried beans
One tbs. mozz. cheese
2 tbs. of salsa

Spread the beans on the tortilla, top with cheese and nuke it for about 40 seconds. Top with your favorite salsa and enjoy!!
Maybe add some onions and green chillies or any other veggie???

Mango Salsa
42 calories, makes 8 servings

2 ripe but firm mangoes
1/2 red onion, chopped
1/2 red bell pepper, cored, seeded, & chopped in 1/4-inch dice
1 tablespoon minced fresh ginger
1/4 cup coarsely chopped fresh mint leaves
1 clove garlic, minced
Juice 2 limes
Juice 1/2 orange
1 jalapeno pepper, seeded and minced
1 teaspoon salt, or to taste

Peel the mangoes and cut the fruit off the center “bone”. Dice into 1/4” pieces. Combine all ingredients. Serve the salsa raw or warm it quickly to serve on chicken, fish, chips, tortilla, crackers, etc.

Sweet Eggs
50 calories

2 egg whites
2 table spoons sugar substitute
1 or 2 tsp. cinnamon
1/8 cup sugar free maple syrup

Mix egg whites until stiff peaks form, then add rest of ingredients.
Put mixture into a bowl and heat in microwave for about 1.5 or 2 minutes then serve.
Many people say this tastes like McDonalds pancakes but without all the fat and excess cals.

Fruit Yogurt Breakfast
150 calories

1 cup of fat free yogurt
blueberries
strawberries
Splenda
1/2 cup of Barbara’s bakery granola bar or substitute

Stir Splenda into yogurt to taste. Microwave 10 blueberries and 3-4 diced strawberries with a little water and a spoonful of Splenda, then stir into yogurt. Crush granola bar and stir into yogurt.

Easy Quesadillas
115-140 calories

1 low-carb tortilla
1 jar of mild or hot salsa
fat free cheese slices
crushed garlic

Top one half of tortilla with a 1-2 pieces of cheese (cut up to fit), 2 tbs salsa, and a very small dollop of garlic. Spread garlic evenly into salsa. Microwave for 1-2 mins, or until melted. Fold over top half of tortilla, let cool, and enjoy!

Chocolate Caramel Popcorn
Depending on amounts of everything used, it ranges from 125 calories to 220 calories

1/8-1/4 cup brown sugar (75 calories-150 calories)
1 tbs. cocoa powder (10 calories)
1/8-1/4 cup water
2-3 cups plain air popped popcorn (20 calories per cup) or substitute with bag popcorn (read the label wink

Spread tin foil or waxed paper out onto a table, and spread popcorn out on top of that evenly, so its all touching and close together, but not in a pile…

Then in a small saucepan, heat up on low-medium temperature the brown sugar, water and cocoa powder, stirring as it heats up, untill its smooth and boiling slightly, but be careful not to burn it!

Then coat the popcorn with the mixture immediately. Spoon to drizzle/ladel it all over the popcorn...it dries quickly.

Improv Jumbo Peanut Butter Cookie
150 calories

2 slices low cal wheat bread
1 tbs. peanut butter
splenda

Take wheat bread slices and cut crusts off. Roll with a rolling pin into very thin slice. Spread one side with 1/2 tbsp of peanut butter just short of the edge of the slice. Sprinkle a thin layer splenda on top of pb and press other slice on top. Crimp or fold over edges of bread together, sprinkle a little water on top of bread and dash with a little more splenda. Bake in toaster or oven at 350 degrees F for 5-8 minutes. Let cool, and you have an improv pb cookie!
