Salsa recipe…..yum yum

3 med.-size ripe tomatoes (about 1 lb.), peeled, cored, seeded and chopped
1/2 sm. red onion, chopped (i prefer red onions)
1 clove garlic, minced
1/2 fresh or canned jalapeno pepper, cored, seeded, and chopped fine
1 tbsp. red wine vinegar
2 tsp. lime juice
2 tsp. olive oil
1/4 tsp. hot red pepper sauce
1. In a medium-size bowl, mix the tomatoes, onion, garlic and jalapeno pepper. (i add some jalapeno chili sauce and tabasco)
2. Stir in the vinegar, lime juice, olive oil and red pepper sauce. Cover and chill in the refrigerator at least 2 hours before serving. Store tightly covered in the refrigerator for up to 1 week. Makes about 2 cups.

Preparation: 5 minutes, plus 2 hours refrigeration.

Besides dipping with chips, it’s great on fish and chicken too!

That does sound delicious… yep I would have to pass on the jalapenos too, I have a very low tolerance for hot ‘n spicy things.

I’m usually very skitish about warm stuff, but just adjust your taste (add a little less, but add SOME)....you’ll find the right mix.....

fresh handmade organic tortillas from trader joes, chicken from the bbq dinner last night.....salsa, cheese, olives, lettece.....all I need now is a Margarita!

Thanks for the salsa recipe, Tom! 

There’s also a really tasty ATE-layer-dip recipe available on the T 03/13/07 edition of the HUNGRY GIRL website.  I love mexican-flavors, and anytime I can have a cup of delicious dip (at a whopping 100 calories - ha!), I’m down!  Yum!

Tom’s recipe would be great on a baked potato.  I’m getting hungry, must be lunchtime!

By coring and seeding the jalepeneo pepper you are removing most of the heat, you could also use roasted chipotle peppers, very little bite.This recipe does not sound very spicey,but it does sound good. Spicey hot food is very good for you, peppers aid in digestion , hot peppers have also been known to aid in weight loss.

If I eat anything that has hot peppers feels like I took a mouthful of stinging nettles.  I ordered a turkey sandwich at a restaurant in Colorado, and specifically said no chipotle sauce.  They didn’t listen - I took one bite - then after two glasses of water then 3 glasses of club soda, (the water didn’t help at all), my eyes stopped watering, and I could breath again, I graciously sent it back to the kitchen.  That waiter doesn’t know how close to death he was that day.  There is no such thing as most of the heat - for me, peppers are just plain bad. 

Now if I could have that much of a reaction to all foods that were bad for me, dieting would suddenly become easy.

Ah, the seeds… do I have a story for you.  Ever have an orange habanero pepper?  I was dining with friends, and the male host of the couple thought he’d mess with one of my close friends.  The hosts had prepared steak on the grill, and tiny pieces of habanero pepper were diced in dishes near our plates. 

The host, named Jim, was eating these things like there was no tommorrow.  I like a little spicy, but since I hadn’t had this particular pepper before, I was staying away from it.  The host was reaching for something and knocked one of the tiny bowls over.  They have cats, so I quickly picked up any pieces that had hit the floor.  Little did I know that some of the seeds that I had picked up were trouble.

Later that evening, as we’re relaxing, something gets near my nose - a bug or something.  You know how that is… you brush the something away from your face.  I ended up touching my nose and the corners of my mouth brushing it away.

Apparently, the oil from the seeds of the habanero pepper was still on my fingers, and I had touched them for just a few seconds!  The oil had searing heat, and my membranes went on overdrive.  Tears were streaming, nose running, and my nose and lips felt like they were on fire!

As I reached for a tissue to wipe my eyes and nose (instinct reaction), LUCKILY Jim grabbed my hand.  If I had gotten even a trace of that oil in my eyes, OMG… I don’t even want to think about it.  I washed and washed and washed, tried lotion, you name it, but it took some time for the burning sensation to fade away.  Lesson learned… LOL LOL

When I was on a multi-vitamin and herbs health regimine with some friends in 1999, I was taking an herbal pill - cayenne pepper.  It was one of those things that went under my radar until I took it at night instead of in the morning, and noticed the effects.  About 30 minutes after taking it, I was sweating, and my heart rate was a bit elevated for someone sitting and reading prior to bed.  Answer?  The cayenne pepper herbal pill was the culprit.

No worries, just very interesting…

There is a mom-and-pop restaurant nearby (Tortilla Factory) that makes homemade salsa that is to die for!  We eat there almost every Saturday, and we’ve started buying some to take home about twice a month.  I’m hoping that with Tom’s recipe, I can save that $10/month towards something else :o)

Josette I’ve had a similar experience with Jalapenoes, just by touching it then rubbing my eyes. I love spicy food I put hot sauce on and in everything!
