Last night’s special dinner was Baked Scallops, without the cream sauce

Put the sea scallops (the big ones) into a baking dish Use a small enough dish so that the scallops are close together
Sprinkle with garlic powder, and fresh parsley (add other seasonings if you like)
Add about 1/4 cup of white wine
Top with a very fine layer of seasoned bread crumbs.
Spray with melted Smart Balance or other butter / butter substitute.  The spray keeps the amount very low.

Bake at 400 degrees for 10 to 15 minutes

I added a mixture of fresh veggies stir fried in a non stick pan with a little fresh garlic, and brown rice.

Enjoy.

It’s important to know that at the end of the day it’s not the medals you remember.  What you remember is the process-- what you learn about yourself by challenging yourself, the experiences you share with other people, the honesty the training demands—those are things nobody can take away from you whether you finish last or you’re an Olympic Champion.

To tri is to risk failure, not to tri is to guarantee it!
