Cool!  A recipe exchange forum!  You guys have already given me several good ideas for meals!  grin

I’ll need to remember to look up a few of my favorite healthy recipes when I get home so I can return the favor.  In the meantime, I will put in a plug for my very favorite healthy eating magazine/website - Eating Well - http://www.eatingwell.com.  There are a lot of good recipes on the website as well.  Their cookbook, Healthy in a Hurry, has been my favorite cookbook ever since I bought it.

What I love about their recipes is that they use real ingredients - none of that fakey, diet stuff - and yet the recipes are low in fat, high in fiber, and generally all around good for you.  If a teaspoon of real butter is what is necessary to really make the recipe great, they’ll use a teaspoon of butter and not try to foist some horrible diet margarine off on you.  shut eye

Polenta & Vegetable Bake
Stir-Fried Spicy Chicken Tenders*
Honey Mustard Chicken
Roasted Chicken Tenders with Peppers & Onions*
Turkey Mini-Meatloaves
Shrimp with Broccoli
Vegetable & Sausage Skillet Supper

Mmmmmmmmm.  grin

* The authors like to use chicken tenders as a time-saver, but I don’t like the little chicken rubber bands that you end up with!  So I just use sliced boneless skinless chicken breast instead.
