Joi’s Sauteed Mahi Mahi

1 1/2-2 pounds Mahi Mahi filet
3 cloves garlic crushed
1/4 white wine
salt and pepper taste
2 tbls. butter per each piece of fish
1/2 tsp. capers per each fish piece (may be omitted)
flour

Slice mahi mahi into 3” thick pieces.  Salt and pepper the mahi mahi.  Dredge each piece in flour and put to the side.

Heat the butter in skillet/pan on MEDIUM-LOW heat.  Place crushed garlic in butter while cooking.  Add the white wine immediately and bring up the heat (Be sure the butter was heated at the low temp because I had it too hot when I added the wine and it “popped and exploded” butter all over!).

Place the Mahi Mahi filets in the pand and saute on both sides until cooked (about 5 minutes each side).

If desired, add 1/2 tsp. capers to pan the last five minutes of cooking.

Calories:  171 in a 5 ounce serving of fish
