2 6-oz. cans chunk light tuna, drained
1 15-oz. can white (cannellini) beans, rinsed
10 cherry tomatoes, quartered
4 scallions, chopped
2 tbls. extra virgin olive oil
2 tbls. lemon juice
1/4 tsp salt
black pepper, to taste
Combine all ingredients in a medium-sized bowl.
Stir gently. Refrigerate before serving.
