Joi’s Feta and Toasted Pine Nut Chicken

Super easy and tasty too!

1/2 cup reduced fat feta cheese, crumbled
3 tbls. toasted pine nuts (can buy regular and toast in toaster oven for 2 minutes)
2 5 o-oz. chicken breasts
Black pepper to taste

1) Preheat oven to 425.  In a small bowl, mix cheese and toasted nuts.
2)Place chicken on aluminum foil and top with cheese and nut mixture.  Fold edges of foil so they meet add cover chicken breasts.  Bake for 10-15 minutes.  Add pepper to taste.

Can’t get any easier than that!

Making this tonight with toasted walnuts since I’m out of pine nuts.  What a great weeknight recipe smile

Made this tonight, very tasty, the combo of pine nuts and feta almost reminded me of gorgonzola when it was all melted together. I was tempted to brown it first...but that adds extra oil. It was good baked.
