Asparagus and Prosciutto (appetizer)

I also made this for our house warming last year and loved it!

Fresh asparagus-cut ends off
Blanch for 2 minutes (Put in boiling water for 2 minutes and then remove and put in ice water to stop the cooking).
Mix garlic herb cream cheese spread with whipped cream cheese spread.
Spread small amount on a small thin piece of prosciutto and then wrap/roll around pieces of asparagus.  I cut the asparagus in half, but you could do even smaller pieces with a piece of prosciutto wrapped around it.

I do a version of this for an appetizer too but I just blanch the asparagus spears, sprinkle with a bit of garlic or other spice then wrap in a very thin sheet of filo dough (I take the easy route here an buy the pre-made type of filo sheets - they are sold everywhere) then just a tiny bit of oil or butter brushed on.  Spray/Oil slightly the baking sheet.  Line up the wrapped asparagus.  Bake for about 10 minutes at 360.  You could add a spread for additional filling but really not necessary.

I made this for a New Years Eve Party.  I had a bit of a fight with the proscuttio but it was yummy yummy yummy!  (We almost didn’t take it to the party it was soooooo good!)

I made this for our Super Bowl party yesterday - I was hesitant because most of my friends are guys who LOVE meat - and cheese - (their favorite food is Velveeta Cheese Dip w/ chips) - but not vegetables.  However - they loved it! And ate it! (Even though one poor guy thought it had green beans in it....yeesh. - This shows how many vegetables he eats! ).  Will definitly make again!~
