Joi’s Lemony Brussels Sprouts

1 lb. fresh brussels sprouts, trimmed
2 tsp. olive oil
1/2 small onion, halved and thinly sliced
1 tsp. grated lemon peel
2 tsp. fresh lemon juice
1/4 tsp. pepper
1/8 tsp. salt (optional)

1) Trim outer leaves from Brussels sprouts.  With a sharp knife, cut a small “X” in the stem end of sprouts; set aside.

2) Combine oil and onion in microwave-safe 1 quart casserole; toss to coat onion.  Microwave, covered, 1 minute.  Add Brussels sprouts and 3 tablespoons water.  Cover and microwave on HIGH 6-9 minutes or until desired tenderness, stirring once.  Add lemon peel, lemon juice, pepper and salt, if desired; toss to coat.

Always looking for ways to cook vegetables so my husband will like them.

Any other ideas on marinades or spices to work with other vegetables?

Sounds good but I don’t like using the microwave for cooking- can you do this on the stovetop? And if so how would you change the recipe?

Hmmmm....I would think that you could do the same recipe but in a skillet.  I would cook the sprouts first in water (1/2-3/4 cup) covered on the stove for about 10 minutes.  As they start to get to your desired tenderness, cook the onion in the olive oil in a skillet...or just finish the sprouts and remove them and put aside while you cook the onion in the same skillet and then add the sprouts and the rest of the ingredients.
