Joi’s Spicy Chicken in Peanut Sauce (Crockpot recipe)

I’m not a big peanut butter fan, but this is actually very tasty with the unusual combination of flavors and seasonings.

1 large chopped onion
2 (10 ounce) cans undrained diced tomatoes with chilies
14.5 ounce can undrained no-salt added diced tomatoes
2 tablespoons honey
1 1/2 tsp. cumin
1 tsp. cinnamon
8 bone-in skinless chicken thighs (about 3 pounds) trimmed of visible fat
1/3 cup creamy reduced-fat peanut butter

1) In a 4-quart or larger slow cooker, combine onion, all tomatoes, honey, cumin and cinnamon.  Add chicken; spoon misture over chicken.

2) Cover and cook on low for 7-8 hours. Stir in peanut butter until melted and well-blended.  Serve chicken with sauce.

This can also be served over rice or couscous.

Yield:  6 servings

I tried this recipe and it was very, very good. I didn’t have cumin so I used chili.  It is interesting to have the kick, followed by the peanut butter flavour!

This is my new favorite recipe - what unbelievable flavor!
I used bone-in chicken breasts, removing the bones once fully cooked and adding the chicken back in after shredding lightly. I also added big chunks of red peppers along with the onions. This was almost like stew - it was so hearty, I used a spoon instead of a fork!

Joi, you have awesome recipes! I cooked a bunch of your recipes this week-end for the first time and everything was so tasty and quick to make! I made the peanut sauce chicken, the french stew chicken, the pizza burgers and tonight, I made the mashed cauliflower, yummy!!! Thank you so much for sharing these. It’s going to make it easier for me to stay on track and not feel deprived at all grin
