Joi’s Lemon-Herb Chicken

Here is the chicken recipe that Scott and I spoke about on this weeks MTM show.

Juice of 2 lemons (about 1/3 cup)
2 tbsp chopped fresh basil (or 2 tsp dried basil)
1 tbsp chopped fresh oregano (or 1 tsp dried oregano)
2 tsp chopped garlic
4 boneless skinless chicken breast halves (about 1 3/4 lb)
1 tbsp plus 1 tsp olive oil

Mix lemon juice, basil, oregano and garlic.  Season chicken with salt and pepper.  Heat oil over medium heat in a large skillet (or grill pan).  Cook chicken 8 minutes; turn and cook 5 minutes more.  Add lemon-juice mixture and stir up anything stuck to skillet.  Reduce heat and cover; simmer until cooked through, about 6 minutes.

We had this chicken dish for dinner tonight.  It was very yummy and very easy to make.

one of my favorie recipies is almost just like this, only with some pepper, lemon zest and a bit of oil in the sauce. I like the idea of just not using the oil. I’m sure joi’s sauce is really great on green beans, broccoli and other vegitables too!
