Oh, I agree with Julie. Crock pot salsa chicken! Just put the chicken in, cover it with salsa and cook on low for about 7 hours. Then you can shred it and make tacos! Or, put it on top of a nice crisp salad with tons of cold veggies!
I make a lot of cool salads in the summer… a tangy non-creamy cole slaw with a lite vinaigrette and a little citrus in it, and I almost always have tomato-cucumber-onion salad at the ready, with just a little oil and some good tangy vinegar. For protein, I can happily go with cottage cheese or a hard boiled egg in a salad instead of meat (I buy those precooked eggs, lazy but efficient). I used to put the crock pot on the porch or patio, to keep the heat completely out of the A/C and to keep the smells outside, especially if it was spicy. There’s always summer grilling!
