I thought I’d post this before I crawl off to bed. Sunday after next, I have a potluck with my Quaker Meeting. I always enjoy making something, but the last 2-3 events, I’ve made the same exact thing, my marinated vegetables. While they’re enjoyed, and they give me something I can really load up on and keep my hand off the potato salad serving utensil, I want to break out a little. Something a bit unusual, healthy, low-calorie, preferably vegetarian so everyone can have it, and hopefully easy to transport. Any ideas?
