Zucchini Stew

This is a favorite of mine, quick & easy to make and it’s filling too.

Needed:

3 12” zucchinis

1 large onion

1 green pepper

1 red pepper

2 cups of button mushrooms

2 cans of diced stewed tomatoes

Prepared or fresh salsa

Cayenne Pepper - Optional

Slice the zucchinis, onions, & peppers into bite size pieces and put in pot. Add mushrooms, tomatoes, and salsa to taste. If you like spicy foods, add a few healthy shakes of cayenne pepper. Add 1-2 cups water and turn on heat to medium. Let it simmer covered for at least an hour. Better yet, if you have a crock pot, use that. Once the veggies are tender, serve in a soup bowl by itself or on top of rice or pasta (linguine is my favorite).

Tasty, filling, easy to make, and even kids like it!

May I just say .... “YUM!” cool smile

As I was reading the ingredient list the first thing that popped into my head was that I bet this would taste great on top of a baked potato, maybe with a bit of low-fat cheddar or cottage cheese for some protein.
