No added fat pumpkin and apricot tea loaf.

Just had to share this, it fills you up, and produces great, big wholesome slices, and tastes great, plus pumpkin is a superfood! What more could you want! It only contains the minimal amount of fat from the eggs, and a little sugar. It’s yum, I always make two, portion it up into slices, then freeze, and just leave out on the day that I need them, works really well.

200g self raising wholemeal flour
40g sugar
1/2 tsp baking powder
1tsp bicarbonate of soda
1tsp mixed spice
1tsp ground ginger
125g ready to eat dried apricots, chopped
425g tin pumpkin puree
2 eggs
juice and zest of one orange, or 1/2tsp orange flavour

Mix all the dry ingredients including the apricot, then stir in the eggs, orange, and pumpkin. Put into 2lb loaf tin, and bake at 170C for 50 mins, or until cooked through. I calculate that if you cut it into six, this is only 220 cals per slice, and those are big slices and really satisfying, enjoy!

PS - I realise these are English measurements, so if there is a friendly USA person out there who could “translate” for me, that would be great!

I’m going to do some scouting around to see if I can find somewhere to convert the measurements.
