Carrot and Orzo Salad with Fresh Dill RECIPE

Print Recipe

ingredients

* 3 lbs. carrots, peeled and sliced diagonally into 2-inch pieces
* 5 large garlic cloves, unpeeled
* 1/4 cup olive oil, divided
* 1 lb. orzo pasta
* juice of 2 lemons
* zest from the 2 lemons
* 4 scallions, white and light green parts only, chopped
* 1/2 cup loosely packed fresh dill, chopped

Fat: 7.5g
Carbohydrates: 42.1g
Calories:255.4
Protein: 5.9g

1. Preheat oven to 450º F.

2. In a small bowl, toss carrots and garlic cloves with 2 tablespoons of the olive oil. Spread on a rimmed baking sheet and bake for 15-20 minutes or until carrots are browned and tender. Remove from oven and let cool for about 10-15 minutes.

3. Squeeze out pulp from garlic cloves into a small bowl and discard skins. Mash pulp with the back side of a spoon until it resembles a paste.

4. Cook orzo according to package instructions. Drain in a colander (do not rinse) then transfer to a large bowl. Toss with remaining olive oil then add carrots.

5. In a small bowl, combine lemon juice, zest, scallions and garlic paste. Mix in dill then pour over orzo mixture and toss until combined. Add salt and pepper to taste.

Serves 8.

I think (if I make it) I will use shredded or sticks of carrots, a light vinegar instead of lemon juice (it sounds like just a salad) dressing and dry dill (the $$ of fresh dill) and half it and maybe add onions, peppers and mushrooms (?) to cook with the carrots.

Were you reading my mind, M?  (Or peeking in my pantry?) I just bought a big container of orzo last week. 

That recipe sounds yummy.  I’m planning to boil a chicken this weekend so I’ll have a lot of cooked chicken meat hanging around waiting to get used up, so I think I’ll make a half-recipe of this and add some of the chicken so it’ll boost the protein content and make it a full meal. 

I like your idea of adding some different veggies, too.

Well I tried this recipe this weekend and it’s a keeper!

My grocery store actually had bunches of fresh dill for only $0.99 so I was able to make the recipe as written.  Well, I made a half-recipe and then added cooked chicken.

The recipe as written would be fantastic served warm as a side dish to go with a piece of fish.  It’s really flavorful.

I bought everything I didn’t have this weekend but did not make it yet.  I will print it out (again!) and put it where I can find it tonight.
Lets see if it can earn two thumbs up.

What would be a more appropriate rating symbol than thumbs or stars? (I don’t want carrot-too vegetable! tongue wink )

Maybe one of the smileys with the tongues? tongue laugh tongue rolleye tongue wink rasberry ? Or if bad hmmm sick ?
