I thought you might be interested in a good way in eating veggies. Here’s a very simple recipe that can go with almost anything:

- Choose some crunchy fresh veggies.
- Cut it in large bites.
- Put it in a plastic bag and add some olive oil.
- Mix well to put oil all around the veggies.
- Remove the veggies from the bag and put it on a cookie pan.
- Put it under the grill until is gets slightly caramelized.
- Serve with fish or meat, or just as an appetizer.

I’ve used this way of preparing veggies with carrots, brocolis, cauliflower and zucchinis. I doubt that it would work with something like tomatoes, spinach or lettuce, but with any other kind of veggies, it does the trick.

Onions, leeks, peppers and garlic are all excellent prepaired this way. Try this, heat your olive oil till it is warm, burner on lowest possible setting, add your favorite herbs, let it sit in there for at least 20 minutes. Do not let the spices fry.
