What are you having for Easter Dinner. I am looking for ideas that are not ham, potato salad and baked beans. (None of which I ever liked and won’t miss.) Gary, of course wants sushi. Any other suggestions?
I’m not much for holiday dinners, but I always like grilled salmon for special meals, maybe with a little ginger marinade. Teriyaki may not be good for Gary because of the salt. Brown rice, and grilled veggies - yum.
Tofurkey! It’s tofu in the shape of a turkey! Thers alway room for Tofurkey,and it’s fun to say! I have even supplied you with a handy dandy disguise kit.
I like tofu and all but suddenly I’m feeling a little ill.
I’m going to my Parent’s for Easter. There will be all of the traditional fixings along with traditional Hungarian choices as well (such as stuffed cabbage, fresh cooked kolbasz (sausage)), etc.... I’m going to pick a couple of my favorite things and fill up on the veggies and bring a fat free dip to share. You can eat anything you want, you just have to use your head and keep the portions in control. (I’m planning on doing my aerobic DVD in the morning before-lunch so that I can have a guilt-free day) Maybe I’ll have half a slice of my Mom’s nut roll. It’s just too good not to have a bite and she only bakes it for holidays. I can be good, I can be good,.....
Is it just the two of you? If so how about a nice healthy salad with some sushi on the side. Put in the freshest things like mushrooms, peppers, green onions, cucumbers, etc.. I always love a nice healthy salad as my main meal. All this talk about food makes me very hungry right now! Time for a nice healthy snack for me. Let us know what you decide upon for the Easter Meal. Enjoy
Or how about some Veggie Kabobs to go with your sushi. Take some veggies like mushrooms, pepper, tomatoes or what ever else you desire and marinade overnight in Italian Dressing. Then cook on a nice warm charcoal grill. MMMMM Yummy. Scooby can’t wait to get home and do some grilling. Then sit back and enjoy your Easter Feast.
I tried putting Gary on a vegetarian diet once. He threaten divorce. Since, I am not done with him yet I’m going with grilled turkey breast with homemade, teriyaki sauce, oven baked sweet potatoe slices, spring greens salad with rasberry vinagrette, sliced watermelon. I’ll even make an angel food cake with sliced strawberries for dessert.
That will be a happy feast. Should I expect any company?
Jackie Sounds great, turkey teriyaki sounds great. Does your teriyaki sauce have sugar in it? May I suggest a little reduced balsmic vinager for the sweet potatoes. Sounds like a really great dinner (Wish I lived next door)
Shaken, not stirred. Marinate for at least two hours in the fridge.
I have never tried the balsamic vinager on sweet potatoes. I usually slice them, spray lightly with olive oil and sprinkle with cinnamon.
Cinnamon is very heart healthy.
I laughed so hard when I read Gary’s response to the vegetarian diet. You’re recipe sounds so yummy. We had steak for supper tonight, so I’m tempted to do Boca burgers and brussel sprouts tomorrow. I love both, and there’s candy in the house, .
That teriyaki sauce sound great. I’m going to try that sometime. I hope you all had a great Easter. I was a good girl and only ate a few of my favorite things at my Mom’s. This year we had some lamb. Boy was that excellent! I made mint pesto to go with it too. Yummy. I stayed away from the array of dips that are usually around and thankfully my Mom listened to me and didn’t make me an Easter basket. Here I am, 38 years old, and I still get a basket! HAHAHA!
