Oh my god ... I just entertained about 20 people yesterday (most Canadian, some American) with a Canada Day BBQ. It was so good, I grilled up inch and a half thick prime rib steaks seasoned to perfection with my own special rub, and slow BBQed fresh coho salmon marinaded in mango and rosemary. Lotsa coleslaw, fresh BC fruit, corn on the cob, iced tea, and beer. Yah, we had some of that too. It rained off and on all around us, but not a drop in my yard HAHA.
Friday, we do it all over again in honour of my American brethren. As most of them are from Texas, I’m doing up beef brisket, quail, tamales, and sausage links on the smoker over hickory and apple-wood. Serve it up with beans, coleslaw, corn on the cob, and southern iced tea. Gonna make some chicken enchiladas in the dutch oven to go with it all. I am out of my home brewed beer, so they will have to settle for the store bought stuff.
