I thought I’d post this before I crawl off to bed. Sunday after next, I have a potluck with my Quaker Meeting. I always enjoy making something, but the last 2-3 events, I’ve made the same exact thing, my marinated vegetables. While they’re enjoyed, and they give me something I can really load up on and keep my hand off the potato salad serving utensil, I want to break out a little. Something a bit unusual, healthy, low-calorie, preferably vegetarian so everyone can have it, and hopefully easy to transport. Any ideas?

Shawn gave me a great curry chick pea recipe a while back. It’s not in the above thread but it used to be in my old 100 Days challenge thread which is gone now. I really liked it a lot and it was simple to make. Very yummy! There was also an excellent zucchini curry dish recipe that he gave me that I tried and was also very good. Maybe he can get you those recipes. I don’t know them by heart and I don’t have them with me at this moment. Maybe send him a PM? It would be worth it!

Here is a copy of Shawn’s recipe tongue wink

Chickpea curry-total 1200 calories by SHAWN

ingredients:
2 tablespoons vegetable oil
2 onions, minced
2 cloves garlic, minced
2 teaspoons fresh ginger root, finely chopped
6 whole cloves
2 cinnamon sticks
1 teaspoon ground cumin
1 teaspoon ground coriander
salt
¼ teaspoon cayenne pepper
1 teaspoon ground turmeric
2 (15 ounce) cans garbanzo beans
1 cup chopped fresh cilantro
--------------------------------------------------------------------------------
DIRECTIONS:
Heat oil in a large frying pan over medium heat, and fry onions until tender.
Stir in garlic, ginger, cloves, cinnamon, cumin, coriander, salt, cayenne, and
turmeric. Cook for 1 minute over medium heat, stirring constantly.
Mix in garbanzo beans and their liquid. Continue to cook and stir until all
ingredients are well blended and heated through. Remove from heat.
Stir in cilantro just before serving, reserving 1 tablespoon for garnish.

My favorite thing to make for get togethers is a fresh fruit platter or salad - you can use what is seasonal and is always a big hit!

I just want to clarify that this dish is only 1200 calories if you consume the whole thing!  LOL
There’s probably enough there for 4+ people.

Hi! I don’t know why, but I didn’t see the replies in this thread till just now. I thought I’d set it to Email notify me. Oops!

Thanks for the great suggestions. The curried chickpeas sound great. I might need to double the recipe but that seems easy enough. I was also thinking of a re-do of something I made about five years ago, a wild-mushroom pierogie. Only I cheated and used egg roll wrappers instead of making the pierogie dough. And the egg roll wrappers didn’t want to seal, and were thin enough to be rather translucent. And cooked wild mushroom mixture looked kind of gray. So they tasted great but looked terrible. smile
