I’ve been making this tasty oatmeal for breakfast every day for weeks, and I’m not tired of it yet! This breakfast is great for the cooler months.
INGREDIENTS:
- 1 cup dry, “quick” oatmeal
- A few dashes of ground cinnamon (or “several”, if you’re not afraid of cinnamon
)
- 2 cups Almond or Soy milk (you can increase or lessen the amount, depending on how you like your oatmeal consistency)
- 1 medium apple, chopped into bite-sized pieces. I use an apple corer/slicer, then use a knife to chop the slices. Red apples taste best in this recipe.
- 1 tablespoon of pure maple syrup. It’s easy to go overboard with this, be careful!
DIRECTIONS:
1. Pour your dry oatmeal into a ceramic cereal bowl. Mix in the cinnamon.
2. Pour the milk into the oatmeal, and mix with a spoon.
3. Mix in your chopped apples, coating them in the oatmeal/milk mixture.
4. Put your bowl in the microwave, and set the timer for 3 minutes. Be careful when retrieving a ceramic bowl from a microwave; it will be HOT!
5. At this point, you could stir your oatmeal, cool it for a bit and eat it as it is, but for an additional kick:
6. Mix in your maple syrup! Mmmm...it reminds me of apple pie, but with less calories!
Notes:
- the apples soften up while in the microwave, and gives them a nice texture to accompany the oatmeal.
- 1 tablespoon of maple syrup is about 50 calories.
- This breakfast is GREAT after a morning workout
- Oats are a great source of fiber, as well as many nutrients. The skin of an apple is also loaded with fiber.
- Pure maple syrup has fewer calories than commercial, sugar-based syrup. It also contains zinc and manganese, which are allies for your immune system.
