While I’ve had it while eating out, I have never ventured to make Tilapia. I picked up some frozen fillets this last weekend so I thought I’d give it a shot. I have to say, it was pretty dang good too.

Marinade (caution, I do not measure ingredients):

olive oil
balsamic vinegar
peper
oregano
minced onion (dried)

Add ingredients in freezer bag (or bowl if you wish), add thawed fillets and let sit for at least 30 minutes. I use a gas grill, so after I got it up to temp and seasoned the grill, I put the fish in aluminum foil, added the rest of the marinade, sealed it up, and put it on the grill on medium high for 12 minutes. There is no need to flip it over while cooking.

I was going to put this with some brown rice, but didn’t get the rice made. Instead I put it in a whole wheat pita pocket with some lettuce, and made a nice sandwich.

One thing that I should have added, but did not, would be lemon juice to the marinade. Another option that may be good would be to squeeze an orange in in, and then add a slice or two with the fish in the foil.

Enjoy!

Todd - I’ve never done anything with tilapia but have wanted to try. Thanks for a recipe to get me started!

I tried something new this weekend with the fish. I seasoned it with lemon salt, and then put some slices of lime on top, and cooked it in sealed foil on the grill. I think lemon slices would work better, but man was it tasty.

This weekend I’m going to grill up some salmon with rosemary and orange slices. My mouth is already watering.

Thanks for the recipe. I love fish, especially when it’s quick and easy to prepare.  I might try to add some veggies right in the foil with the fish for a complete meal.

I haven’t done this with fish, but it would work quite well, maybe with some asparagus. I did a pork roast on the grill one time with the potatoes and carrots in the foil. As of late though I’ve been using a grilling board for doing the roast. Keep me posted on the veggies. I’d be interested in what you use and how it turns out.
