Lentil dip and vegetables

Here is something that i had today. As it is a bit out of the ordinary i thought i would share it with you.

Apart from a high level of proteins, lentils also contain dietary fiber, vitamin B1, and minerals

100 g / 0,220 pound of red lentils - the red ones are the fastest to cook
A small amount of dried tomatoes (i took three) - the ones without oil - cut into small pieces
5 black olives without stone - also cut
garlic - of course cut
250 ml vegetable broth

in a pan with a small amount of olive oil i shortly roasted the garlic, the dried tomatoes and the olives. Just to enhance the flavour. Then add the vegetable broth and the lentils, cook for 20 minutes.
Don’t salt ! Its very tasty without, maybe because of the vegetable broth or the olives.

Then puree and eat with vegetable sticks. I had mine with fennel, cucumber and radishes. All in all it is approx. 500 calories for the whole thing, but i doubt that one can eat more than half of it, because it is very filling. So only about 250 calories - yippie !

And now we have enough calories left for some good dessert grin

yum yum.....a little green onions, some mushrooms....yummy!  Thanks for sharing@@!

I really like sun dried tomatoes.  A local Ralphs grocery store here in SCAL has some fresh ones (but you have to get there when they first get them, they dry out.....but you can always soak them in water.
I bought a jar that had them soaked in oil......paper toweled them so got rid of most of the oil, but not all...an nice addition to many recipes!
