Favorite Healthy Grilling Foods

I was just posting in another topic about Easter Dinner and had suggested to someone about grilling Veggie Kabobs.  I had said you could use veggies like mushrooms, peppers, tomatoes, or what ever else you desire.  Then marinade overight in Italian Dressing.  The next day place the veggies on a skewer and place on the grill until cooked nicely.  Depending upon your temperature of the Grill it could take 10 to 20 minutes to cook.  With that in mind what are your favorite recipes for cooking good tasting healthy food on the Grill??  Would like to know what the people in MTM land think about this one.  Then what is your grill of choice gas or charcoal??  Scooby prefers charcoal, but really likes the convience of gas.  80% of the time I use a charcoal grill. Tell me what you think.  Thanks for sharing.

Charcoal, only. The taste is superb. Gas is just cooking outside bah. That and fire is cool. I prefer a good, thick steak with a salt rub and veggie kabobs. Grilled corn on the cob is good, but I love making tinfoil packs with onions and mushrooms and garlic. Yummy.

beer can chicken and hobo potatos.

I use a gas grill with duel burners. I like to put the meat on one side and light the fire on the other. It cooks more evenly than direct heat from just the under side.

Cut up potatos into slices about 1/2 thick. You can peel the potatos first but I prefer the skin on. Wrap them in foil with a sliced onion and/or mushrooms. I like to sprinkle garlic salt on the whole mess too. Add a pat of butter or margarine and wrap them up. Put them on the grill for about 30 minutes, flip them over every once in a while. You can check them by sticking a poker through the whole thing without unwrapping. When they feel soft, they are done! If you arent sure you can move them to the top rack of your grill while your meat is cooking. They will continue to cook. They are pretty hard to overcook.

I am “basic” when it comes to grilling… but I love grilling up the lean meats like top sirloin steak and pork loins (and add a little seasoning like Lawry’s). When the weather is nicer, I actually grill up some steak, pork, and chicken breasts and cut them into 4 oz servings and have them for meals throughout the week.

Fish is also great on the grill, esp salmon, if you don’t overcook it. Although they are a little heavy on the fat content, the marinated “No Name” grilled salmon are great and include the idiot-proof pop-up timer.

Actually, what has become a family favorite is lean turkey burgers. We actually don’t even need to put ketchup or any other toppings on it!! Just some seasoning and a wheat bun and they turn out great!

I am a charcoal griller all the way.  It’s a lot of trouble and you have to wait for the coals to get good and ready, but it’s worth it.  I tried the cedar shingles last season and I love them with the grilled veggies.  I have an herb garden and I will throw rosemary and thyme or sage on the coals right before grilling.  Soak fresh cut branches in water.  It’s a lovely flavor.

I like the cone starters that you don’t have to use lighte fluid.  It’s tricky to learn to use, but once you get the hang of it, it’s great.  I line the bed of my grill with lava rocks from the garden center.  They keep the heat even and you use less coal. 

I have an old grill Scott and Gary’s dad bought for us before he died. When parts get rusted, I keep replacing them with newer parts.  I have rebuilt that old grill so many times, but I like that it has sentimental value.  It somehow makes everything taste better.  The original Mr. Smith also thought I liked my meat too rare.  I told him that if it didn’t cluck, moo or flap around on my plate, it was overcooked.  It makes me smile to think about that when I grill.

Turkey burgers are wonderful with a few seasonings in the meat grind.  I agree you ruin them with ketchup and pickles and stuff.

Jackie - I don’t eat much meat, but I’m with you on having it rare.  Just make sure it’s good quality, but then, you’re a goddess so it has to be the best.

Grilled Scallops .......

1) Soak a cedar plank for minimum of 2 hours
2) Mix 1/2 cup brown sugar, with 1/2 cup olive oil (EV) Salt and pepper in a bowl
3) Soak 12 large Scallops in the mixture, until thoroughly covered
4) Place Scallps on cedar plank over indirect heat on preheated BBQ (about 325 degrees) for 10-12 minutesm (until middle is cooked through-do NOT overcook)
5) Serve with 1/2 cup of Quinoa (mixed with green onions, mushrooms, Italian parsley from the gardne and olives)
6) Serve also with sauted zuccinis, cooked in butter and fresh garlic
7) While making the meal, drink Robert Mondavi ‘Private Collection’ Napa Valley Chardonay (and serve with dinner too!)
8) Finish with Valhrona Chocolate and a Late harvest Gerwertstaminer ........

Tandori or jerk sauce anything,chicken, fish, lean pork,veggies. Tandori is an indian yougourt and spice marinade made in a special oven called a Tandor but a regular grill is an ecellent substitute. Jerk sauce originanted in the Caribbean and consists of Caribbean spices.(Allspice,Scotch Bonnet and Tyme) Recipes very depending on what part of the Caribbean whoever is cooking is from.

Wow folks some really cool ideas!  Thank you very much for sharing I do appreciate it alot.  Anybody else have some more fun ideas.  Grilling season is just upon us and I would love to hear from more people to see if anyone else has any other cool grilling ideas.  See my original post below for a refresher on this one.  thanks again everyone for your input so far.  Let’s keep this one going to see if we can get more fun grilling ideas.
