Roasted Rutagagas

What a surprise!  These were surprisingly tasty and except for slicing them, super easy!

INGREDIENTS

Rutagabas (buy small ones to make slicing a little easier)
Olive oil
Salt, garlic powder and paprika

That’s it!

DIRECTIONS

Preheat oven to 425 degrees.

Peel rutabagas and slice in 1/4 inch rounds (with a good knife).  You can do them in strips, but watch them carefully because they will cook faster and burn.

Spray or brush with olive oil and a little salt and put them on a nonstick baking sheet.

Cook about 12 minutes, turning twice.  Take out when golden brown and tender.  Immediately sprinkle with garlic powder and paprika.  Optional- some kosher salt at the end is nice as well.

JOI'S NOTES

1 cup raw (4.9g) rutabaga has 50 calories
Carbs:  11.3g
Protein:  1.7g
Fiber:  3.5g
