Grilled Pork Tenderloin with basic dry rub

Pork tenderloin is a great lean meat and nothing is easier than a good rub and a grill during the summer!


INGREDIENTS

1 tbls. dried oregano
1 tbls. coriander seed
1 tbls. cumin seed
1 tbls. fennel seed
1 tbls. mustard seed
1 tbls. onion powder
1 tbls. garlic powder
1 tbls. salt
2 tbls. spanish paprika
1/2 tbls. black pepper
2 bay leaves
1 - 1 1/2 pound pork tenderloin


DIRECTIONS

Combine all ingredients except the tenderloin and grind in a spice grinder (coffee grinder works well).  Cover the tenderloin with the rub and let sit for 30 minutes.

Preheat grill or broiler to high.  Grill the pork until an inserted thermometer reads 140 degrees F, about 15-18 minutes.  Let roast rest for 5 minutes before slicing.
