Baked Shrimp, Corn & Zucchini (in aluminum foil pouches)

Gotta try this one!  Super simple, healthy and tasty!


INGREDIENTS

3 tbls. olive oil (I got by with 2tbls. just fine if you want to use less oil)
1 tsp. minced garlic (I always use more garlic than asks for smile
1 tsp dried Thyme
1 tsp. salt
2 medium zucchini, cut in 1 1/2-2 inch chunks (about 3 cups)
4 ears corn on the cob, cut into 1 1/2-2 inch pieces
1 lb. uncooked shelled and deveined shrimp
8 thin slices of lemon (I only had limes on hand and that worked also)

 


DIRECTIONS

1)  Heat oven to 450 degrees.
2)  In a large bowl, combine oil, garlic, thyme and salt.  Add zucchini, corn and shrimp; toss.
3)  On each of four (14X18 inch) sheets of aluminum foil, place 1/4 of the shrimp mixture in the center, top each with 2 lemon slices.  Bring long sides together and fold, leaving room for steam to circulate; seal ends.
4)  Place packets in a single layer on a large baking sheet.  Bake 15 minutes; remove from oven and let stand 5 minutes before opening. Serve immediately.

    I made this recipe - super quick and easy to make.  I might make a variation to this - remove the corn from the cob, add in some carrots and once cooked place it in lettuce and make wraps.  I also didnt use any garlic but added a tablespoon of white wine.  I’ll also add green onions next time too to make up for not using garlic.

    PS: I wish there was somewhere that we could see photos of the completed dish.  It helps cooking challenged people like me!

    Yummy!! Baked Shrimp, Corn & Zucchini recipe is really delicious to enjoy. Its healthy ingredients, simple making way and after making nice smell and unforgettable flavor makes me always amazed. Thanks mate and keep it up.
