Apple-Mustard Pork Tenderloin

This is a great recipe that can be cooked in a slow cooker or baked.

INGREDIENTS

1 lb. pork tenderloin
1/4 cup apple cider vinegar
2 tbls. unsweetened apple sauce
1 clove garlic, minced
2 tsp. low sodium soy sauce
1/2 tsp. grated ginger
2 tsp. dijon mustard

DIRECTIONS

Place the pork in a slow cooker (or baking dish).

Combine all remaining ingredients in a bowl and mix together.

Pour over pork, coating generously.

Cover and cook on low for 6 hours (or 45 minutes at 350 degrees in the oven).
